Three Bean Veggie Chili

This is a great recipe for Sunday night to make lunches or dinners for the rest of the week. All it takes is a quick stop at the store for supplies and a large crock pot or deep pot and you’re ready to go! I love this dish because there’s very minimal chopping and dicing involved and it makes a large amount. So grab your can opener because you’ll need it for this one.

What you’ll need:

  • 3 cans of beans (your choice)
  • 1 large can of crushed tomatoes
  • 2 med red onions chopped
  • 3-4 minced cloves of garlic
  • 1 can of sliced mushrooms
  • 1 tbs of EVOO
  • 2 tbs of tomato paste
  • 1 cup of water
  • 2 tbs of chili powder
  • 1 tbs of cumin
  • 1 tsp of crushed chili flakes
  • Sea salt and ground pepper to taste

Instructions:

  1. In a large crock pot or deep pot on the stove begin adding in ingredients
  2. Start with EVOO, garlic, onion, and tomato paste
  3. Next add in crushed tomatoes, water, mushrooms and beans
  4. Begin to add in spices while stirring the pot to mix everything together
  5. Turn crock pot onto low temp for 4-6 hours

NOTE: If you’re using the stove top, bring to a boil then reduce heat to low and simmer for about an hour

Serve over some quinoa and you have yourself a complete protein dish that is packed full of fiber, vitamins, and protein to keep you full and energized!
