Asian Fusion Salad- And My 100th BLOGPOST!!

This is officially my 100th Blogpost!! I can’t believe I’ve posted that many recipes, videos, nutrition tips and more here on my blog! I love blogging and sharing all my healthy knowledge with other like minded people and reading all your comments and feedback 🙂 Thank you soo much for reading and subscribing to my blog it means soo much to me. Asian Fusion Salad Image

Now back to today’s post I wanted to show you all this amazing and delicious Asian Fusion Salad that I’ve been really enjoying these last couple of days. When it comes to salads I always like to choose dark leafy greens for the base becuase they are packed full of nutrients. I normally use greens like kale, arugula, and baby spinach but I changed it up for this recipe and used bok choy! Bok choy (Aka: chinese cabbage) is probably my new favourite leafy green to use in salads! I’ve always just used it in stir frys and soups but never raw.

Reasons to eat Bok Choy:
– It’s super low in calories- about 13 cal per 100g that you basically burn it off during digestion so in turn adds “zero calories”
– 100 g provides about 75% of your daily vitamin C recommended intake
-good source of minerals like magenesium, calicum and potassium
-helps regulate blood pressure!
-Very high in vitamins A and K – About half your reccomended daily intake ❤

* did I mention it’s super inexpensive!

So now that I’ve shown you why bok choy is amazing and why you should go pick some up today… Lets get to the recipe itself…

What You’ll Need:

-2 bundles of washed and chopped bok choy
-1-2 sliced green onions
-1- 1 1/2 cups of sliced mushrooms
-1 red bell pepper diced
-1/2 cup of raw walnuts or any nuts you like:)
Pual Newman’s light balsamic dressing (love this brand)

How To:

1. In a large salad bowl simply add in all your washed and prepared veggies and mix it all up with some salad tongs.

2. Next, protion out into smaller bowls and add one capful (or 1 tbsp.) of dressing to each portion and topped with nuts ( you can crumble them if you like).
